Créme fraîche is one of the most magical creamy dairy-licious products out there. It’s very similar to regular cream cheese, but it has the most lovely tang that transforms sauces, and in this case, mashed potatoes.
Peel and dice the potatoes. Add to a large pot of cold salted water and bring to a boil. Cook until fork tender & then drain.
In a large bowl, add butter, créme fraiche, heavy cream, and salt to the potatoes and mix with a hand mixer until creamy. Adjust the salt to taste. If you like extra butter, I won't judge you!
