Crisp Apple Salad with Apple Cider Vinaigrette

Crisp apples slightly warmed with sautéed shallots with a simple apple cider vinaigrette are perfect fall salad flavors.

Slice apples and a shallot. You can use Fuji apples or your favorite crisp apples. Sauté the shallot over medium heat for a couple of minutes, then add the apples.

To make the dressing, mix the whole grain mustard, maple syrup, and apple cider vinegar together.  Add the olive oil in and whisk with a fork. Add golden raisins and mix.

To make this salad even tastier, you can add all kinds of proteins, such as chicken thighs and bacon, or different types of nuts, seeds, and cheeses.
