Gluten Free Spiced Pumpkin Muffins

To get started, mix together brown sugar and coconut oil. Then add vanilla, pumpkin puree, and eggs and whisk until combined and smooth.

In a separate bowl, mix together gluten free (or traditional) flour, cinnamon, cloves, nutmeg, and allspice. Then add this to the wet ingredients and whisk together until combined.

Add your batter to a muffin tin (this recipe makes 24 muffins!). You can top them with pecans and brown sugar for extra deliciousness! Now bake and serve.
