Upside Down Roasted Chicken

Chop whole carrots and a large onion into 2 to 3 inch pieces. Next, finely chop rosemary. Reserve 1-2 full sprigs for pan.
Lay the onions, carrots, and 2-3 sprigs of rosemary in a circle in an oven safe pan.
Next, season chicken with salt and pepper and rub with butter and your preferred fat.

Bake the chicken until it reaches an internal temperature of 160-165 degrees Fahrenheit. Let rest for 10-15 minutes before carving!

Slice horizontally under the breast meat to the bone
Slice each breast in thick slices
