Hey hey folks! This recipe is a quick one, but a GOOD one. Take that back, it’s a SUPER DELICIOUS one. What recipe is that, you ask? A creamy and dreamy Blueberry Mango Pistachio Smoothie Recipe to be exact 😛 !
For the last few months, I have been a smoothie recipe creating machine. I am working on a smoothie book with a friend/neighbor/fantastic writer/farmer/tutor/fellow foodie and hope to be complete in next ten years. Ok, I kid a bit, but sometimes it feels like I’ll never finish! All that’s left to do is take photos of all fifteen smoothies, edit, crop, resize, and rename them, as well as put the entire ebook together, edit the writing, figure out how to sell it on my site and amazon, market it to let the world know about it, and on and on and on…. So, not much left to do, right?
The good news is, all the smoothie recipes are done and they are FANTASTIC. Occasionally, I’ll create a recipe that doesn’t work with the theme of my smoothie book (stay tuned for what it’s all about), but is still incredibly delicious. That happened today with this luscious blueberry smoothie.
Lately, pistachios have been one of my favorite ingredients to work with.
Using pistachios in smoothies is possibly one of those ingredients you might have never thought to use. But trust me, with the right blend of ingredients, it completely TRANSFORMS the flavor of many smoothie recipes, especially this blueberry mango delight!
The ingredients are simple:
Blueberries, mango, pistachios, greek yogurt, fresh ginger, and coconut milk, mmmmm. Blend it, drink it, and feel your eyes roll in the back of your head with intense pleasure. You’re welcome!

BLUEBERRY MANGO PISTACHIO SMOOTHIE RECIPE
Ingredients
- 1 cup blueberries
- 1 cup mango pitted and sliced about 1/2-3/4
- 1/2 cup vanilla greek yogurt or regular yogurt
- 1 cup coconut milk
- 1/4 cup pistachios
- 1/2 inch slice fresh ginger
Instructions
- Blend all ingredients together in a blender until nice and smooth.
- Serve immediately.
- Makes 26 oz.

Hi Leslie, you have great arrangement of your smoothie photos. They look really professional. As for the smoothie itself, it looks more like a youghurt or ice cream 🙂
